Braised Fennel with Lemon & Thyme

Ingredients:

  • 3 fennel bulbs, cut into wedges

  • 1/4 cup olive oil

  • 1 cup vegetable broth

  • Juice of 1 lemon

  • 2 tablespoons fresh thyme leaves

  • Salt and pepper to taste

  • Lemon zest, for garnish

Directions:

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the fennel wedges and cook until they start to brown, about 5 minutes per side.

  3. Add the vegetable broth, lemon juice, and thyme leaves to the skillet. Season with salt and pepper.

  4. Cover and simmer for 20-25 minutes, until the fennel is tender.

  5. Remove the cover and cook for an additional 5 minutes, allowing the liquid to reduce slightly.

  6. Garnish with lemon zest before serving.
