Braised Fennel with Lemon & Thyme

Ingredients:
3 fennel bulbs, cut into wedges
1/4 cup olive oil
1 cup vegetable broth
Juice of 1 lemon
2 tablespoons fresh thyme leaves
Salt and pepper to taste
Lemon zest, for garnish
Directions:
In a large skillet, heat the olive oil over medium heat.
Add the fennel wedges and cook until they start to brown, about 5 minutes per side.
Add the vegetable broth, lemon juice, and thyme leaves to the skillet. Season with salt and pepper.
Cover and simmer for 20-25 minutes, until the fennel is tender.
Remove the cover and cook for an additional 5 minutes, allowing the liquid to reduce slightly.
Garnish with lemon zest before serving.
